Melting Chocolate

Double boiler: This method takes a little longer than the direct heat method, but eliminates the possibility of scorching the chocolate. Place water in the bottom of the double boiler so the top of the water is 1/2 inch below the upper pan. Place the chocolate in the upper pan. Place the double boiler over low heat. Stir the chocolate constantly until it is melted. Do not allow water to boil.

  Greasing and flouring a cake pan
+ Brush an even, thin layer of shortening, melted butter or vegetable cooking spray over the bottom, into the corners and up the sides of the cake pan.

+ Sprinkle 2-3 tablespoons flour in cake pan, then turn and shake the pan so that the flour evenly coats the bottom and side. Tap the pan to remove all the excess flour.

+ Stand pan on a sheet of baking parchment paper; draw around base with a pencil. Cut just inside the pencil line.

+ Grease the inside of the pan, then place the baking parchment in the bottom. Grease the parchment paper.
