1001 Star Jam Sandwich Cookies

1001 Star Jam Sandwich Cookies
  • 4 cups - Domino® Sugar 1001 Cookie Starter Mix
  • 1 1/2 teaspoons - vanilla extract
  • 1 - large egg, lightly beaten
  • raspberry or strawberry jam

Instructions

In large bowl, mix together all ingredients using your hands or a stand mixer with a dough hook. Divide dough in half, shaping each half into a disk. Wrap disks in plastic wrap. Chill at least 3 hours in the refrigerator, or place in the freezer for 1 hour until firm enough to roll.

Preheat oven to 375°F. Grease cookie sheets, or line with parchment paper. On a lightly floured board, roll dough, one disk at a time, to 1/4 inch thickness. Cut into star shapes using cookie cutters. Arrange cutouts 2 inches apart on prepared cookie sheets. Bake 10 to 12 minutes.

To make star sandwich cookies: Before baking, take 1/2 of star cookie cutouts, and using a small star-shaped cookie cutter, cut a small star out of the larger star's center. This will be the top half of your "sandwich". Once the cookies are baked and cooled, flip the solid cookie upside down, and spread jam in it's middle. Then, take the cookie with the star insert cut out, and place on top, creating a jam sandwich!

Makes 1 to 1 1/2 dozen sandwich cookies.
