Avocado-Spice Layer Cake

Ingredients List
Cake:
- 2 ½ cups - cake flour, sifted
- 3 tsp. - baking powder
- ¼ tsp. - baking soda
- ½ tsp. - salt
- ½ tsp. - cinnamon, ground
- ½ tsp. - nutmeg, ground
- ¼ tsp. - cloves, ground
- ¼ tsp. - allspice, ground
- 1 cup - Domino® Granulated Sugar
- ½ cup - butter, softened (1 stick)
- 2 - large eggs
- 3 Tbsp. - buttermilk (or 3 Tbsp. milk + 1 tsp. lemon juice)
- 1 cup - ripe avocado, mashed into puree (about 2-3 medium avocados)
Avocado Frosting:
- 1 - ripe avocado, pureed
- 1 tsp.- lemon juice
- ¾ cup - butter or shortening, softened
- ½ tsp. - salt
- 3 ½ to 4 cups - Domino® Confectioners Sugar, sifted
- 2 Tbsp. - milk, half-and-half, or cream
Instructions
Cake:
Preheat oven to 350°F. Grease and flour two 8" round cake pans.
In small bowl, combine flour, baking powder, baking soda, salt and spices. Mix well. In large bowl cream butter and sugar until light and fluffy, Add eggs, buttermilk, and avocado puree and beat well. Gradually add dry ingredients; beat until smooth.
Pour batter into prepared pans. Bake 30 minutes or until cake springs back when touched. Cool on racks, then frost.
Avocado Frosting:
To the pureed avocado, add lemon juice, softened butter, salt, and sugar; beat well. Gradually add milk or cream, beating until the mixture is of spreadable consistency. If necessary, add more milk, ½ tsp. at a time.
Makes one 8" layer cake.
