Double Orange Cupcakes
Treats For the Lunchbox or For Children's Parties
Ingredients List
- 1 1/4 cups - Domino® Granulated Sugar
- 3/4 cup - butter or margarine (1 1/2 sticks), softened
- 3 - eggs, separated
- 3 cups - all-purpose flour
- 4 teaspoons - baking powder
- 1/2 teaspoon - salt
- 1 cup - orange juice
- Pinch - salt
- Pinch - cream of tartar
- 1 teaspoon - orange rind, finely grated
Orange Icing
- 2 cups - Domino® Confectioners Sugar
- 3 tablespoons - orange juice
- 1 teaspoon - orange rind, finely grated
Instructions
Preheat oven to 350°F. In large bowl, beat sugar and butter until fluffy. Beat in egg yolks. Combine flour, baking powder and 1/2 teaspoon salt. To sugar mixture, add flour mixture alternating with orange juice. In large glass or metal bowl, beat egg whites with pinch salt and cream off tartar until stiff but not dry. Gently fold into sugar mixture along with orange rind. Fill 24 paper-lined muffin cups half full. Bake 20 minutes or until toothpick inserted in center comes out clean. Frost with Orange Icing.
Orange Icing
Combine all ingredients and beat until smooth. spread icing over cupcakes. Let stand until firm.
