Ingredients List

Frozen Mocha Latte Parfait
  • Coffee granita:
  • 3 cups - hot, strong brewed coffee
  • 1/2 cup - Domino® Granulated Sugar
  • Assembly:
  • 1 cup - chocolate syrup
  • 1 pint - coffee ice cream
  • Sweetened whipped cream (recipe follows):
  • 1 cup - heavy cream
  • 2 tablespoons - Domino® Granulated Sugar
  • 1/2 teaspoon - vanilla extract
  • Chocolate shavings
  • Espresso beans
  • Unsweetened cocoa powder

Instructions

To Prepare Coffee Granita:
In pitcher or bowl, combine coffee and sugar, stirring until sugar dissolves. Pour mixture into a 13x9-inch glass baking dish or other shallow container and place in the freezer. After about 1 hour, when mixture starts to get icy around the edges, use a spoon to stir and break up ice crystals. Return to freezer. Freeze 2 to 2-1/2 hours longer, stirring occasionally until mixture forms fine, firm icy flakes.

To Prepare Sweetened Whipped Cream:
Combine heavy cream, sugar and vanilla in a chilled medium mixing bowl. Beat on medium-high speed until soft peaks form.

To Assemble Parfait:
Fill a pastry bag with sweetened whipped cream and refrigerate until ready to use. Pour 1-2 tablespoons of chocolate syrup into bottom of six tall 16-ounce glasses. Place a scoop of coffee ice cream into each glass. Top with a scoop of coffee granita. Pipe a large rosette of whipped cream on top of granita and drizzle with chocolate syrup. Garnish parfait with chocolate shavings and espresso bean and dust with cocoa powder. Serve immediately.

Makes 6 servings.
