Hawaiian Coconut Pudding
This Dessert Can Be Chilled In a Mold or in a Prepared Pie Crust
Ingredients List
- 1 1/2 cups - Domino® Confectioners Sugar
- 1 env. - unflavored gelatin
- 1/4 tsp. - salt
- 1 1/4 cups - milk
- 1 tsp. - vanilla
- 1 1/3 cups - coconut, flaked
- sweetened fruit
Instructions
Lightly oil 6-cup mold. In large saucepan, combine sugar, gelatin, salt and milk. Let stand 4 minutes. Cook over medium heat, stirring constantly, until sugar and gelatin dissolve, do not boil. Stir in vanilla. Chill until mixture thickens but do not allow to gel. Stir in coconut. Carefully fold in cream so as not to reduce volume. Pour into mold. Chill 4 hours. Unmold and serve with sweetened fruit.
