- 4 cups - water
- 2 1/2 cups - Domino® Superfine Sugar
- Pinch of salt
- 1 cup - fresh squeezed lemon juice
- 1 tablespoon - grated lemon rind
In medium saucepan, bring water, sugar and salt to a boil. Remove from heat and cool 30 minutes. Add lemon juice and rind. Pour into shallow pan. Freeze until slushy.
In food processor or blender, blend 10 to 15 seconds. Freeze. Process again after 2 hours. Store covered in freezer.
Makes 1 1/2 quarts.
1 pound or about 5 medium lemons yields 1 cup of lemon juice.
