Mexican Flan

Caramel:

  • 1/2 cup - Domino® Granulated Sugar

Custard:

  • 5 - eggs
  • 2 cups - milk
  • 1/3 cup - Domino® Granulated Sugar
  • 2 teaspoons - vanilla
  • 1/8 teaspoon - salt

Instructions

Preheat oven to 350°F. Place a 1 1/2-inch deep, 9-inch pie pan in oven to heat. In tea kettle or large pan, bring water to boil for water bath.

To Prepare Caramel:
Heat 1/2 cup sugar in small, heavy saucepan over low heat until sugar melts and turns golden brown, stirring frequently. Pour into heated pie pan. Using oven mitt, tilt to coat bottom of pan. Place in larger pan (a 15x10-inch baking pan at least 1 inch deep would work).

To Prepare Custard:
Combine remaining ingredients in large bowl; blend well. Pour into coated pie pan. Add boiling water to larger pan to depth of about 1/2 inch. Bake at 350°F for 30-35 minutes or until knife inserted comes out clean. Cool about 20 minutes.

Before serving, loosen edges with knife. Invert onto serving plate. Cut into wedges and spoon caramel sauce over custard. Serve warm or refrigerate until chilled and serve cold.

Makes 8 servings.

Quick Tip

A flan is simply a custard that is baked in a caramel-coated dish. When the baked custard is inverted, the caramel forms a layer on top.
