Molded Melon Mousse

A Fabulous Fruit-Filled Molded Dessert That Can Be Made Ahead of Time

Molded Melon Mousse
  • 1 - medium cantaloupe
  • 1/2 cup - Domino® Granulated Sugar
  • 1/2 cup - water
  • 1 env. - unflavored gelatin
  • 6 oz. - orange juice concentrate, frozen and unthawed
  • 1 tsp. - vanilla extract
  • 1 cup - whipping cream
  • mint sprigs

Instructions

Quarter and pare melon. Discard rind and seeds. Cut one quarter into narrow wedges. Wrap and refrigerate for garnish. Cut remaining melon into balls (about 1 1/4 cups), using melon baller or teaspoon. Toss with sugar; set aside. Combine water and gelatin in saucepan. Cook over medium high heat, stirring constantly until gelatin dissolves. Stir in undiluted orange juice concentrate and vanilla. Fold in whipped cream and melon ball mixture. Turn into 5-cup ring mold. Chill until set, at least 2 hours. Unmold on serving plate. Garnish with reserved melon wedges and mint.

Makes 4 to 6 servings
