Pineapple Chiffon Dessert
A Coconut Lover's Delight
Ingredients List
- 1 cup - coconut, flaked and toasted
- 1 - (12 oz.) can evaporated milk
- 1 - (3 oz.) pkg. lemon flavored gelatin
- 1 cup - boiling water
- 1 - (8 oz.) can crushed pineapple
- 1 tbsp. - lemon juice
- 1 tsp. - grated lemon rind
- 2/3 cup - Domino® Granulated Sugar
- whipped cream (optional)
Instructions
Sprinkle 2/3 cup coconut over bottom of 13x9x2-inch dish. Chill milk in freezing tray until icy around edges. In medium bowl, dissolve gelatin in hot water; add pineapple, lemon juice and rind and sugar. Chill until partially set; whip until fluffy. In medium bowl, whip chilled milk until stiff and fold into gelatin mixture. Pour over coconut in pan; sprinkle remaining 1/3 cup coconut over top. Chill several hours.
TO SERVE: Cut into squares and top with whipped cream, if desired.
Makes 12 to 15 servings
