Vanilla Sandwich Cookie With Dulce De Leche Filling
A Simplified Version Of Alfajores, The Popular Sandwich Cookies Found Throughout Argentina.
Ingredients List
- 2 - hardboiled large egg yolks
- 4 ounces - unsalted butter, softened
- 1 teaspoon - vanilla extract
- 1/3 cup - Domino® Granulated Sugar
- 1 cup - all-purpose flour
- pinch kosher salt
- 1 cup - dulce de leche (or your favorite caramel sauce, refrigerated)
Instructions
In food processor mix together the egg yolks, butter, vanilla, and sugar until smooth. Add flour and salt and mix until smooth. Press dough into ½-inch disc and wrap in plastic wrap. Refrigerate until firm, about 30 minutes.
Preheat oven to 350° F. Flour work surface and place the dough on top. Flour top of dough. Roll out ¼-inch thick. Cut into 2-inch circles. Re-roll and cut dough until you have 32 cookies. As you roll dough, it will become softer and may stick, so roll gently and use more flour as needed. Place cookies on parchment-lined baking sheets an inch or so apart.
Bake for 8 to10 minutes until golden brown around the edges. Cool to room temperature.
Just before serving, place a teaspoon of the dulce de leche or caramel sauce on half of the cookies. Place second cookie on top.
