Maple Chocolate Chip Mini Cupcakes with Maple Buttercream Frosting

A maple buttercream and sweet syrupy drizzle top these chocolate chip cupcakes.

24 mini cupcakes

  • 1 egg, beaten
  • 1 cup whole milk
  • 1/4 cup Domino® Maple Flavored Granules
  • 1 3/4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/4 cup (1/2 stick) salted butter, softened
  • 1/2 cup mini chocolate chips

  • 3/4 cup (1 1/2 sticks) butter
  • 2 cups Domino® Confectioners Sugar
  • 1/2 teaspoon vanilla extract
  • 2 to 3 tablespoons milk
  • 1/4 cup Domino® Maple Flavored Granules

  • 3 tablespoons Domino® Maple Flavored Granules
  • 1 tablespoon hot water

Preheat oven to 350°F. Grease or line a mini cupcake pan with paper liners.

In a large bowl, mix egg, milk and maple flavored granules together, stirring to dissolve the granules.

In a separate bowl, sift flour and baking powder together. Fold into wet ingredients; this will take a few minutes. Gently add butter; stir until incorporated. Stir in chocolate chips. Fill each cupcake cup 2/3 full (approximately 1 tablespoon) with batter.

Bake 10 to 12 minutes, checking after 10 minutes by inserting a toothpick in a cupcake. It will come out clean when done.

Remove the pan and rest on a cooling rack for 3 minutes. Remove cupcakes and complete cooling on the open rack.

Cupcakes should be completely cooled before frosting.

In a large bowl, mix butter on high speed until light in color and fluffy, approximately 2 to 3 minutes. Add in sugar, 1 cup at a time, on low speed, mixing after each addition. When all of the sugar has been added, mix in vanilla, milk and maple flavored granules.

Store in refrigerator if not using right away. Remove 15 minutes before using and stir well; frost cooled cupcakes.

In a small bowl, stir hot water into the maple flavored granules, allowing them to dissolve. Let rest for 10 minutes to thicken.

Drizzle on frosted cupcakes before serving.
