A delicious dairy-based beverage blended with the light taste of our organic agave nectar
- 4 cups - whole milk
- 1 teaspoon - vanilla extract
- 2 - cinnamon sticks
- 4 - whole cloves
- 10 - large egg yolks
- 3/4 cup - Domino® Organic Blue Agave Nectar Syrup
- 1/4 teaspoon - salt
- 1 cup - half and half
- 2 teaspoons - vanilla extract
- 1/2 teaspoon - ground nutmeg

In medium saucepan over low heat, combine milk, vanilla, cinnamon and cloves. Slowly bring mixture to slight boil, stirring occasionally, for about 30 to 40 minutes. Remove from heat, strain hot milk mixture to remove cinnamon stick and cloves.
In large stainless steel bowl, whisk together egg yolks, blue agave syrup, and salt until frothy. Slowly pour hot milk mixture into egg yolks in steady stream, whisking constantly.
Pour mixture into saucepan, return to stove and cook over low heat, whisking constantly until it reaches 160°F. Continue to cook until it thickens slightly, a minute or two longer, and then stir in half-and-half and additional 2 teaspoons vanilla.
Remove from heat and cool in saucepan for one hour. Transfer into pitcher or airtight container.
Place uncovered in refrigerator 1 to 2 hours until chilled, cover and continue to chill overnight. Garnish each serving with pinch of nutmeg and agave whipped cream if desired.
Yields 12 1/2-cup servings
