All-in-One Cupcakes and Frosting--Baby Chicks

These adorable Easter cupcakes are almost too cute to eat! Shredded coconut and candy are transformed into bright yellow feathers and baby chick beaks.

INGREDIENTS

Frosting and Cupcakes

  • 6 ounces cream cheese, softened
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 tablespoon vanilla extract
  • 1 (2 lb.) pkg. Domino® Confectioners Sugar
  • 2/3 cup milk, divided
  • 4 large eggs, slightly beaten
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup water

Decorating

  • 1 (14 oz.) pkg. shredded coconut
  • yellow food coloring
  • 1 (12 oz.) pkg. mini candy-coated chocolate pieces
  • 24 orange jellybeans or gumdrops

INSTRUCTIONS

Preheat oven to 350°F. Line two muffin pans with paper liners.

Frosting
In large mixing bowl, beat cream cheese, butter and vanilla at medium speed until smooth. Add sugar alternately with 1/3 cup milk, beating 1 to 2 minutes or until blended. Remove 2 1/2 cups of frosting from bowl, placing into a separate bowl, and set aside.

Cupcakes
With mixer at slow speed, add eggs and 1/3 cup milk to remaining frosting in mixing bowl. Beat until blended. In separate bowl, combine flour, baking powder and salt. Add flour mixture to frosting mixture alternately with water and continue beating 1 to 2 minutes or until well blended. Fill muffin cups halfway.

Bake 20 to 25 minutes, or until a toothpick inserted in the center of a cupcake comes out clean. Cool completely before frosting.

To Make Baby Chicks
Before decorating cupcakes, make sure they have completely cooled; remove from muffin tins.

Place shredded coconut in a large resealable food-storage plastic bag. Add 2 to 3 drops of yellow food coloring; seal bag and shake to color coconut; set aside.

Add 2 to 3 drops yellow food coloring to reserved frosting. Mix until well combined and desired color is reached. Using a butter knife, or icing knife, spread yellow buttercream frosting onto cupcakes. Roll tops of cupcakes in coconut to cover.

For eyes, add two brown mini candy-coated chocolate pieces in center of cupcakes. For beaks, use orange jellybeans or small gumdrops, and flatten with a rolling pin. With a paring knife, trim flattened gum drops into triangles to resemble beaks; place on cupcakes.

Add additional yellow coconut to form a Mohawk on the head of the baby chick, after adding eyes and beak.
