Applesauce Oatmeal Snack Cake

INGREDIENTS

Cake

  • 1 cup Domino® Granulated Sugar
  • 1/4 cup oats, quick-cooking rolled
  • 1 cup all-purpose flour
  • 1/4 cup (1/2 stick) butter or margarine, softened
  • 1/4 cup water, chilled
  • 1 egg
  • 3/4 cup applesauce, plain
  • 1/2 cup raisins
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cloves

Topping

  • 1/2 cup firmly packed Domino® Light Brown Sugar
  • 1/4 oats, quick-cooking rolled
  • 1/4 cup all-purpose flour
  • 1/4 cup pecans, chopped
  • 3/4 teaspoon cinnamon
  • 1/4 cup (1/2 stick) butter or margarine, softened
  • Domino® Confectioners Sugar for sprinkling

INSTRUCTIONS

Cake

Heat oven to 350°F. Generously grease a 9-inch square baking pan.

Combine sugar, oats, flour, butter, water, egg, applesauce, raisins, baking soda, cinnamon, nutmeg, salt, baking powder and cloves in large bowl. Beat until well mixed. Pour into prepared pan.

Topping

Combine brown sugar, oats, flour, pecans and cinnamon in small bowl. Cut in butter until mixture is crumbly. Sprinkle streusel over top of cake batter.

Bake 45 to 55 minutes, or until toothpick inserted in center of cake comes out clean. Cool completely.

Sprinkle cake with confectioners' sugar before serving.
