Blueberry Streusel Muffins
- 1 recipe 4-in-1 Muffin Mix
- 1 teaspoon all-purpose flour
- 1 cup fresh blueberries, stems removed
- 3 tablespoons oats
- 2 teaspoons cinnamon
- 3 tablespoons flour
- 3 tablespoons butter, melted
Preheat oven to 350°F. Grease a 12-cup muffin pan and set aside.
Prepare 4-in-1 Muffin Mix as directed; set aside.
In a bowl, add flour to the blueberries and stir until berries are coated with flour. Fold blueberries into the batter.
In a separate bowl, combine oats, cinnamon, flour and melted butter to make streusel mix; set aside.
Fill each muffin cup 3/4 full. Top each with approximately 1/2 tablespoon streusel mix. Bake 14 to 15 minutes, or until toothpick comes out clean. Cool in pan on wire rack 3 to 4 minutes. Remove from pan and cool completely.
Serve or store in an airtight container in the refrigerator for up to 2 days.
