Carrot Cookies

Jam-packed with carrot, coconut and pecan flavor, these cookies are a bite-sized delight.

INGREDIENTS

Cookies

  • 1/2 cup (1 stick) butter or margarine, softened
  • 1/2 cup shortening
  • 3/4 cup Domino® Granulated Sugar
  • 2 eggs
  • 1 1/4 cups carrots, cooked and mashed
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup coconut, shredded
  • 1/4 cup pecans, finely chopped

Orange Buttercream Frosting

  • 1 tablespoon butter or margarine, softened
  • 2 cups Domino® Confectioners Sugar
  • 1 1/2 teaspoons orange juice
  • 2 teaspoons orange rind, grated

INSTRUCTIONS

Cookies

Preheat oven to 400°F. Grease cookie sheets.

Beat butter, shortening and sugar in large bowl until light and fluffy. Add eggs and carrots.

In small bowl, stir together flour, baking powder and salt; gradually add to butter mixture until blended. Stir in coconut and pecans.

Drop by teaspoons, 2 inches apart, onto prepared cookie sheet. Bake 10 to 12 minutes or until firm; cool. Frost with Orange Buttercream Frosting if desired.
 

Orange Buttercream Frosting

In medium mixing bowl, blend butter or margarine, confectioners' sugar, orange juice and grated orange rind until smooth.
