Carrot-Shaped Cake Cookies

These soft-bake cookies make fun Easter treats that will have every kid asking for more carrots!


12 to 18 large cookies


  • 2 cups grated carrots
  • 3/4 cup (1 1/2 sticks) butter or margarine, softened
  • 1 cup Granulated Sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • Cream Cheese Frosting
  • orange and green food coloring


Preheat oven to 375°F. Line cookie sheets with parchment paper or lightly grease; set aside.

In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla; mix well. Stir together flour, baking powder, baking soda, cinnamon and salt in small bowl; gradually add to sugar mixture. Stir in carrots.

Place cookie batter into a large pastry bag; cut a 1/2-inch opening at the tip. Directly onto prepared pans, pipe out a carrot shape by starting wide at the top of the carrot, gradually decreasing pressure and ending narrow to form a point. Cookies should be about 4 inches long, piped 2 inches apart.

Bake 16 to 18 minutes or until edges are golden brown. Let cool completely on cookie sheet.

To Decorate: Make Cream Cheese Frosting as directed. Remove about 1/3 of frosting into a separate small bowl. Add 2 to 4 drops orange food coloring to larger portion of frosting; mix until well combined. Repeat with green food coloring for smaller portion of frosting. Place orange frosting in a pastry bag, fitted with an open circle tip. Place green frosting in a separate pastry bag, fitted with a leaf tip.

Pipe orange frosting onto cookies, starting 1 inch down from the top, going side-to-side to cover completely, down to the tip of the carrot. With green pastry bag, pipe green leaves in a bottom-to-top motion, forming small 1-inch leaves, covering the top of cookie.

Store cookies in refrigerator in an airtight container. Do not layer cookies when storing.


To easily make 2 cups of grated carrots, use pre-cut baby carrots and finely chop them in a food processor. Use about 2/3 of a 1 lb. bag of baby carrots to get 2 cups of grated carrots.
