Cinnamon Sugar Peach Campfire “Sammie”

INGREDIENTS

Peach Filling

  • 2 tablespoons Domino® Light Brown Sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 1 teaspoon cornstarch
  • 2 cups (3/4 lb.) fresh or frozen sliced peaches
  • 1 teaspoon lemon juice

Sammies

  • 16 pieces hearty or “farmhouse-style” white bread
  • 4 tablespoons butter, softened
  • 2 tablespoons Domino® Light Brown Sugar
  • ½ teaspoon ground cinnamon

INSTRUCTIONS

Filling

In a medium saucepot, stir all filling ingredients together until cornstarch dissolves then bring to a boil over medium-high heat.

Reduce heat to low and simmer for 15-20 minutes until syrup is a desired thickness. Hold aside until ready to use.

Sammies

Lay bread slices out and butter one side of each. In a small bowl blend brown sugar and cinnamon together. Sprinkle a ½ teaspoon of cinnamon sugar over the butter on each slice.

Place bread, buttered side down, on each of the 2 sides of the campfire sandwich maker. Spread 2-3 tablespoons of peach filling on top of one slice, leaving about ½” from the edges bare.

Close the sandwich maker and cook on the grate or hold over hot coals for 3-5 minutes per side, depending on the heat.

Turn “sammie” out onto serving plate, cut in half, if desired.

Peach filling can be made and chilled up to one week in advance.
