Creamy Lemon Frosting
enough for a 1-layer cake
- 2 cups Domino® Confectioners Sugar
- 1/4 cup (1/2 stick) butter or margarine, softened
- 1/2 teaspoon lemon rind, finely grated
- 1 1/2 tablespoon lemon juice
In a medium bowl, beat sugar and butter until fluffy. Beat in lemon rind and juice until creamy and smooth. Add more lemon juice, if necessary, to make a good spreading consistency.
Double this recipe to frost a 2-layer cake.
