Creamy Rice Pudding
- 1 cup heavy cream
- 1 cup milk
- 1/3 cup long grain rice
- 2 large eggs, beaten
- 1/4 cup Domino® Light Brown Sugar
- 1/4 teaspoon vanilla extract
- pinch ground cinnamon (optional)
In medium saucepan, combine cream and milk, and bring just to a boil. Add rice and reduce heat, cover and simmer, stirring frequently, for 20 minutes or until rice is tender.
In separate bowl, whisk eggs, sugar and 1/2 cup rice mixture. Slowly add back to hot rice mixture, stirring constantly until thickened. Be careful not to boil. Stir in vanilla. Let cool for 10 minutes.
Top with cinnamon, if desired.
