Feast Day Cookies for Passover
- 1/2 cup Domino® Granulated Sugar
- 3 eggs, well beaten
- 1/2 cup matzo cake meal
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup walnuts, chopped
- 1/2 cup seedless raisins
Preheat oven to 400°F. Grease cookie sheet.
In a large mixing bowl, gradually beat sugar into beaten eggs until light and foamy. In small bowl, combine matzo cake meal, cinnamon and salt; gradually fold into egg mixture. Add nuts and raisins; stir to combine.
Drop by teaspoonfuls 2 inches apart onto prepared cookie sheet. Bake 10 to 12 minutes or until lightly browned. Remove to cooling rack.
Store in airtight container with waxed paper between layers.
