Foil-Grilled Plantains with Ice Cream & Caramel Sauce

  • 2 large, very ripe plantains
  • 1 tablespoon butter
  • 1 tablespoon Domino® Light Brown Sugar

Caramel Sauce

  • 2 tablespoons Domino® Light Brown Sugar
  • 2 tablespoons butter
  • 1 tablespoon heavy cream
  • 1/4 teaspoon balsamic vinegar
  • 1/4 teaspoon vanilla extract
  • pinch sea salt
  • vanilla ice cream

Foil-Grilled Plantains with Ice Cream & Caramel Sauce



Slice the ends off the plantains and score each plantain lengthwise. Do not remove the peel. Wrap scored plantains in heavy-duty foil.

Preheat grill to medium-high. Place foil-wrapped plantains on grill. Cover and cook 20 minutes, rotating after 10 minutes.

In a small bowl, stir butter and sugar together.

Carefully open foil packet. Using two forks, spread open the peels. Spoon butter mixture over plantains. Close packet and cook an additional 10 minutes. Be careful of hot steam.

Caramel Sauce

Place brown sugar, butter, heavy cream and vinegar in a small saucepan. Stir constantly over medium-low heat until it begins to boil. Reduce heat to low and simmer 5 minutes, stirring constantly. Remove from heat. Stir in vanilla extract and salt.

To Serve

When cool to the touch, open foil, remove plantains from peels and cut into 1/4-inch slices. Place plantain slices into a bowl, top with vanilla ice cream and caramel sauce. Serve immediately.
