Frozen Mocha Latte Parfait
- 3 cups hot, strong brewed coffee
- 1/2 cup Domino® Granulated Sugar
Sweetened Whipped Cream
- 1 cup heavy whipping cream
- 2 tablespoons Domino® Granulated Sugar
- 1/2 teaspoon vanilla extract
- 1 cup chocolate syrup
- 1 pint coffee ice cream
- chocolate shavings, for garnish
- espresso beans, for garnish
- unsweetened cocoa powder, for garnish
In a pitcher or bowl, combine coffee and sugar, stirring until sugar dissolves. Pour mixture into a 13x9-inch glass baking dish or other shallow container and place in the freezer.
After about 1 hour, when mixture starts to get icy around the edges, use a spoon to stir and break up ice crystals. Return to freezer.
Freeze 2 to 2 1/2 hours longer, stirring occasionally until mixture forms fine, firm icy flakes.
Sweetened Whipping Cream
Combine cream, sugar and vanilla in a chilled medium mixing bowl. Beat on medium-high speed until soft peaks form.
Fill a pastry bag with whipped cream and refrigerate until ready to use.
Pour 1 to 2 tablespoons of chocolate syrup into bottom of six tall 16-ounce glasses. Place a scoop of coffee ice cream into each glass. Top with a scoop of granita. Pipe a large rosette of whipped cream on top of granita and drizzle with chocolate syrup.
Garnish parfait with chocolate shavings and espresso beans and dust with cocoa powder. Serve immediately.
