Frozen Peach Sorbet Bellini
6 to 8 servings
- 1 lb. peaches, frozen
- 1/2 cup Domino® Granulated Sugar
- 1 cup water
- 1 bottle champagne or seltzer
In a saucepan, over medium heat, add first three ingredients. Bring to a boil, then reduce heat to medium-low. Simmer 5 to 10 minutes or until peaches are tender. Remove from heat and cool completely.
Using an emulsifier or blender, puree mixture until smooth. Transfer to a shallow 6-cup airtight container. Cover and freeze until firm (4 hours or overnight).
Remove from freezer 15 minutes before serving. Uncover and set aside.
Using an ice cream scoop, scoop mixture and place in a champagne flute. Top off with champagne or seltzer.
