Galaxy Filled Cupcakes

INGREDIENTS

Cupcakes

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 2 cups Domino® Organic Raw Cane Sugar
  • 5 large eggs, room temperature
  • 2 1/2 teaspoons vanilla extract
  • 1 cup sour cream
  • 1/2 teaspoon white vinegar
  • 2 teaspoons black food gel color
  • 1/2 cup milk
  • small white star jimmies

Galaxy Frosting

  • 1 cup (2 sticks) butter, softened
  • 3 cups Domino® Confectioners Sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 to 2 tablespoons milk
  • 2 drops sky blue food gel color
  • 2 drops fuchsia food gel color
  • 2 drops violet food gel color
  • 1 teaspoon black food gel color
  • silver star sprinkles

Galaxy Filled Cupcakes

INSTRUCTIONS

Cupcakes

Preheat oven to 350°F. Line cupcake pans with cupcake liners; set aside.

In a medium bowl, mix together flour, baking soda and salt; set aside.

In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, mixing after each addition. Add vanilla, sour cream and vinegar; mix. Add food coloring and mix well to blend completely.

Alternate add flour mixture and milk, beginning and ending with flour mixture. Mix on low speed to incorporate all of the flour mixture, scraping sides of bowl as needed.

Fill cupcake liners 3/4 full. Bake 30 minutes, until toothpick inserted into cupcake comes out clean. Cool on wire racks.

When cooled, use a melon baller or small spoon to scoop out a 1- inch hole in the center of each cupcake. Fill with star-shaped jimmies.

Galaxy Frosting

Cream butter using an electric mixer, on medium speed, about 3 minutes, until butter is pale yellow. Scrape sides of bowl as needed. Add confectioners’ sugar 1 cup at a time. Add vanilla extract. Add milk as the mixture begins to stiffen. Cream the frosting for 2 minutes or until light and fluffy.

Divide frosting evenly into 5 bowls. Leave one bowl white. Color each of the remaining frosting bowls with food coloring, blending color well, so that you have four colors: sky blue, fuchsia, violet and black.

Place a 12-inch piece of plastic wrap on counter. Spoon each of the colored and white frosting in strips adjacent to each other onto plastic wrap. Lift up plastic wrap from one end and fold over strips of frosting, then twist ends of plastic wrap to close ends. Trim one end of plastic wrap, if needed, then slide entire wrapped frosting, cut-end first, into a piping bag fitted with a large star piping tip.

Pipe frosting on top of each cupcake in a circular motion. Top each cupcake with silver star sprinkles.
