Grill Cupcakes

These clever cupcakes turn melted chocolate and gummies into miniature grill toppings, making them the perfect end to your summer BBQs!

INGREDIENTS

Cupcakes

  • 1 cup firmly packed Domino® Light Brown Sugar
  • 1 cup Domino® Granulated Sugar
  • 2/3 cup (1 1/3 sticks) butter or margarine, softened
  • 1/2 tablespoon salt
  • 3 ounces (3 squares) unsweetened chocolate, melted and cooled
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 1/4 cups chilled water

Frosting

  • 1 (1 lb.) pkg. (approx. 3 3/4 cups) Domino® Confectioners Sugar
  • 1/2 cup (1 stick) butter or margarine, softened
  • 3 to 4 tablespoons milk
  • 1 teaspoon vanilla extract

Decorating

  • orange food coloring
  • red food coloring
  • 1 (10 oz.) bag chocolate wafers
  • 1 (5 oz.) bag gummy candies

INSTRUCTIONS

Cupcakes

Preheat oven to 350°F. Line 24 muffin cups with paper baking cups.

Beat sugars, butter, salt and chocolate in a large mixing bowl, at high speed, until light and fluffy. Add eggs and vanilla; continue beating 1 to 2 minutes, until well mixed.

In a small bowl, stir together flour and baking soda. Add to chocolate mixture, alternately with water, blending well after each addition. Fill muffin cups 2/3 full.

Bake 18 to 22 minutes, or until toothpick inserted in center comes out clean. Cool completely in pan.

Frosting

Combine in a large bowl, sugar, butter, milk and vanilla. Beat at medium speed 1 to 2 minutes, until creamy. If desired, add more milk until frosting is spreading consistency.

Separate frosting into two bowls. Tint one bowl of frosting red; the other bowl orange. Fill piping bag fitted with star tip with both colors, side by side. Frost each cupcake.

Decorating

Melt chocolate wafers in microwave in 30-second intervals, stirring until completely melted.  

Fill a piping bag with melted chocolate. Using a small round tip, pipe 2- to 3-inch circles on parchment paper. Add stripes to make a grill. Allow chocolate to set, or refrigerate for 5 minutes.  

Cut gummy candies into 4 pieces; skewer onto toothpicks.  

Once chocolate grills have set, carefully peel from parchment paper and place onto frosted cupcakes. Top each chocolate grill with skewered gummy candies.
