
Grilled Peach Pizza with Bourbon Caramel Sauce

INGREDIENTS
Crumb Topping
- 1 cup all-purpose flour
- ½ cup Domino® Dark Brown Sugar
- ½ tablespoon cinnamon
- 6 tablespoons butter, softened
Pizza
- 1 premade pizza dough, room temperature
- 2 tablespoons olive oil
- 1 tablespoon butter, chilled
- 1½ tablespoons Domino® Sugar ‘N Cinnamon
- 3 pitted and sliced peaches
Brown Sugar Bourbon Caramel Sauce
- 3 tablespoons butter
- ¼ cup milk
- 2/3 cup Domino® Dark Brown Sugar
- ½ teaspoon fine sea salt
- 1½ tablespoons bourbon
INSTRUCTIONS
Crumb Topping
In a large bowl, mix together flour, sugar and cinnamon. Add butter and mix with a fork until crumbly.
Pizza
Preheat grill to 300°F (medium heat). Lightly grease a large bowl. Flour a baking sheet.
Place pizza dough in bowl. Let it come to room temperature.
Stretch dough into an oval or circle on prepared baking sheet. Brush top of dough with olive oil.
Place dough, oil side down onto grill. Cover and grill 2 to 3 minutes. Dough will begin to bubble, press bubbles down. Brush dough with olive oil and flip dough over.
Turn grill heat down to low. Dot the chilled butter over top of cooked side.
Sprinkle with cinnamon sugar.
Arrange peach slices and sprinkle with crumble mixture.
Cover and cook on low 3 to 4 minutes, checking after 3 minutes.
Each grill heats differently. Remove pizza from grill and drizzle with bourbon sauce.
Brown Sugar Bourbon Caramel Sauce
In a medium saucepan, melt butter over low heat. Add milk and stir to combine.
Whisk in brown sugar, stirring continuously 2 to 3 minutes. Add salt and bourbon.
Heat additional 3 to 4 minutes until the mixture has slightly thickened.
Let cool 1 to 2 minutes.
