Grilled Spice Crusted Steak

This spice crusted steak will just melt in your mouth.


1 to 4 servings


Herbed Lemon Butter

  • 1/4 cup (1/2 stick) butter, softened
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/4 teaspoon granulated garlic

Spice Crust

  • 1/4 cup ground black pepper
  • 1 1/2 teaspoons ground white pepper
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon ground coriander
  • 1/4 cup Domino® Granulated Sugar
  • 1 tablespoon salt
  • 1 teaspoon granulated garlic
  • 4 sirloin or tenderloin steaks, or 1 flank steak


Herbed Lemon Butter

In a small bowl, mix the butter, parsley, lemon juice and garlic. Roll in plastic wrap into a log shape.

Refrigerate until firm.

Spice Crust

In a small bowl, mix together both peppers, red pepper flakes, coriander, sugar, salt and garlic. Rub this spice mixture onto both sides of each steak. Shake off excess rub.

Place steaks on hot grill and cook for 2 minutes; turn and cook an additional 2 minutes. Transfer steak to a cooler section of the grill; continue to cook until desired doneness.

Serve each steak with a slice of herbed lemon butter.


As the steak cooks, the sugar melts, mixes with the spices, and caramelizes to create a crunchy crust that is both sweet and spicy.

The lemon butter mellows out the peppery flavor.
