Grilled Watermelon Squares Served with Feta Cheese

Looking for a BBQ appetizer? Watermelon and feta are the ultimate summer flavor combo in these Mediterranean-inspired sandwiches.

  • bamboo skewers
  • 1 medium watermelon, cut into squares
  • 1 cup Domino® Organic Blue Agave Nectar Syrups
  • 1 (5 oz.) bag mixed salad greens
  • 1 package Feta cheese
  • 4 pieces pita bread


  • 2 cups balsamic vinegar
  • 1/2 cup Domino® Granulated Sugar
  • 1 (1.5 oz.) milk chocolate bar



Soak bamboo skewers in water for at least 30 minutes.

Cut watermelon into 3”x3-inch” squares or 2”-inch cubes, if desired. Thread watermelon onto soaked skewers. Store in refrigerator until ready to use. Be sure melon is as firm as possible before grilling.

Heat grill to a medium-high temperature. Grill skewered watermelon on a well-greased grill grate. Brush with agave nectar while cooking. Cook 1 minute on each side.

Place grilled watermelon onto a platter when done and assemble sandwich immediately.


Heat balsamic vinegar in a saucepan on medium-high heat, stirring until it has reduced to 1 cup. Add sugar; stir until dissolved. Add chocolate; stir until melted. Store glaze in an airtight container, preferably glass. Heat glaze in microwave, if needed, before serving.

To assemble, place salad greens on a plate; drizzle with balsamic glaze. Place grilled watermelon on top of salad greens; sprinkle Feta cheese on top. Add another watermelon square, sprinkle with Feta cheese and drizzle with the balsamic glaze.

Transfer assembled watermelon to pita bread.
