Honey Cake with Apple Glaze
- 1 cup vegetable oil
- 3 eggs
- 1 1/2 cups Domino® Granulated Sugar
- 1 cup honey
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
- 1 cup strong black coffee, brewed
- 1 cup Domino® Confectioners Sugar
- 1 1/2 tablespoons apple juice
Preheat oven to 350°F. Grease and flour a 12-cup fluted tube pan.
In large mixing bowl, beat oil, eggs and sugar until blended. Gradually add honey; beat until blended.
In medium bowl, combine flour, baking powder, baking soda, cinnamon, allspice, cloves and salt. Add to honey mixture, alternately with coffee, beginning and ending with flour mixture; beat until smooth. Pour into prepared pan.
Bake 50 to 55 minutes, or until toothpick inserted in center comes out clean. Cool completely on wire rack. Remove from pan.
In small bowl, combine confectioners' sugar and apple juice; stir until smooth. Drizzle over cake before serving.
