Matzo Brownie Bites
48 brownie bites
- 5 ounces unsweetened chocolate
- 1/2 cup margarine
- 2 cups Domino® Granulated Sugar
- 4 large eggs
- 1 cup matzo cake meal
- 1 tablespoon water
- 1/2 cup walnuts, chopped (optional)
- 1/4 teaspoon salt (optional)
Preheat oven to 375°F. Grease two 24 count mini-cupcake pans well with non-stick cooking spray, or line each with mini paper liners; spray liners lightly. Set aside.
In a medium saucepan over low heat, melt margarine and chocolate, stirring constantly to avoid burning, until chocolate melts. Remove from heat; slowly add sugar. Stir to combine and cool completely.
In a medium bowl, beat eggs. Remove 1/2 cup of warm chocolate mixture; pour slowly into the eggs, mixing to temper eggs into chocolate mixture. Pour egg mixture into saucepan and stir. Add matzo meal, water, salt and nuts (if desired). Pour into prepared mini cupcake baking pans.
Bake 14 to 16 minutes, or until a toothpick inserted in center comes out clean. Place pans on wire rack to cool completely.
