Piña Colada Coconut Cooler

INGREDIENTS

Sherbet

  • 4 cups fresh peeled, cored and cubed pineapple
  • 1 cup full fat coconut milk, divided
  • 1/2 cup Domino® Organic Raw Cane Sugar

Cooler

  • 2 cups coconut water
  • 3 cups sparkling water
  • 6 ounces rum, optional

INSTRUCTIONS

Sherbet

Freeze pineapple chunks in an airtight container for 3 to 4 hours, or until frozen.

In a blender, add frozen pineapple and ½ cup coconut milk. Blend until smooth. Add remaining milk and sugar. Blend until very smooth. Pour mixture into a 32 ounce plastic container with a tight fitting lid. Freeze 8 hours.

Cooler

Place 2 scoops sherbet into a tall glass. Pour the coconut water over the sherbet. Top with sparkling water.

QUICK TIP

Add 1½ ounces of rum per cooler for an adult beverage.
