Popcorn and Peanut Crunch

Popcorn and Peanut Crunch

This sweet and salty popcorn mix is the perfect ball game snack.

3 1/2 to 4 cups popcorn

  • 3 1/2 cups popped popcorn
  • 1 1/2 cups peanuts
  • 1 cup firmly packed Domino® Light Brown Sugar
  • 1/2 cup butter or margarine
  • 1/4 cup light or dark corn syrup
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon vanilla

Preheat oven to 250°F.

In a large shallow baking or roasting pan, combine the popped popcorn and peanuts.

In a 1 1/2-quart saucepan, combine brown sugar, butter and corn syrup. Cook and stir constantly over medium heat until butter melts and mixture comes to a boil. Boil without stirring for 5 minutes.

Remove from heat; stir in baking soda and vanilla. Gradually pour mixture over popcorn, mixing well. Bake for 1 hour, stirring every 15 minutes. Remove baked popcorn to a large bowl and mix gently once or twice as mixture cools completely. Store in tightly covered container.

Recipe tip: one package of microwave popcorn makes about 3 1/2 cups popped popcorn.
