Raspberry Lemon-Glazed Muffins

When life gives you lemons, make muffins! Zesty and tart, these fruity muffins are made from our simple, 4-in-1 recipe base and finished with a sugary lemon glaze.


12 muffins


  • 1 recipe 4-in-1 Muffin Mix
  • 2 tablespoons lemon zest
  • 1 cup whole fresh raspberries
  • 1 tablespoon lemon juice
  • 1/2 cup Domino® Confectioners Sugar


Preheat oven to 350°F. Grease a 12-cup muffin pan and set aside.

Prepare 4-in-1 Muffin Mix as directed. Fold in lemon zest and raspberries. 

Fill each muffin cup 3/4 full with batter. Bake 14 to 15 minutes, or until a toothpick comes out clean. Cool on rack 3 to 4 minutes.

In a bowl, mix lemon juice and confectioners’ sugar into a glaze.Add a drop or two of water if glaze is too thick.

Remove muffins from pan and place on a piece of waxed paper. Drizzle glaze on cooled muffins. Let glaze set before serving.

Store in an airtight container in the refrigerator for 1 to 2 days.
