Red, White and Blue Cookie Squares

Top these cookie bars with raspberries and blueberries for a fresh fruit flavor and a patriotic touch.

INGREDIENTS

Crust

  • 1 cup Domino® Granulated Sugar
  • 3/4 cup (1 1/2 sticks) butter or margarine, softened
  • 1/2 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon rind, grated
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder

Filling

  • 12 ounces Neufchatel cheese, softened
  • 1/2 cup Domino® Confectioners Sugar
  • 1 teaspoon vanilla extract

Topping

  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups fresh raspberries

INSTRUCTIONS

Crust

Preheat oven to 350°F. Prepare ungreased 15x10x1-inch baking pan.

In large mixing bowl, cream sugar, butter and salt until light and fluffy. Beat in egg, vanilla and lemon rind until well combined. Stir dry ingredients into creamed mixture; combine well. Pat mixture evenly into prepared baking pan.

Bake 15 to 17 minutes, or until light golden brown and set in center. Cool completely.

Filling

Cream together all filling ingredients until light and fluffy. Spread evenly over cooled cookie crust. Cut into 24 squares.

Topping

Before serving, arrange berries in alternate rows on squares, as shown in photo. Store cookie squares in refrigerator.
