S'more Mini Cupcakes

These mini cupcakes are the perfect campfire dessert.


96 mini cupcakes


  • 1 Chocolate Touchdown Cake recipe
  • 1 Seven Minute Frosting recipe
  • 1 package graham cracker cookies


Preheat oven to 350°F. Prepare cake recipe according to directions. Divide batter into 4 mini (24-cup) baking pans.

Bake for 20 to– 22 minutes, or until cupcakes spring back to the touch. While cupcakes are baking, make frosting.

While cupcakes are cooling, prepare graham crackers. Microwave graham crackers, one at a time, for 30 seconds to soften. Cut each graham cracker into eight 1-inch squares.

Top each cupcake with a dollop of frosting and a graham cracker square.
