Surprise! Cupcakes

Bake cherries, caramels or chocolates into the center of these cupcakes for a sweet surprise.

INGREDIENTS

Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 cup Domino® Granulated Sugar
  • 1/4 cup cocoa powder, unsweetened
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup (1 stick) butter or margarine, melted
  • 1 egg, lightly beaten
  • whole maraschino cherries, drained or unwrapped caramels, chocolates, mint patties or pecan or walnut halves (surprises)

Frosting

  • 2 cups Domino® Confectioners Sugar
  • 1/4 cup (1/2 stick) butter or margarine, softened
  • 1/4 cup cocoa powder, unsweetened
  • 3/4 teaspoon vanilla extract
  • 2 to 3 tablespoons milk
  • colored sprinkles (optional garnish)
  • colored jellybeans (optional garnish)

INSTRUCTIONS

Cupcakes

Preheat oven to 375°F. Grease 18 medium muffin cups or line with paper baking cups.

Combine flour, sugar, cocoa, baking soda and salt in a small bowl; mix well. Add buttermilk, butter and egg; blend just until dry ingredients are moistened.

Fill muffin cups 1/3 full. Place a "surprise" in center of each, pressing down slightly. Top with remaining batter, filling cups 2/3 full.

Bake 17 to 22 minutes, or until top springs back when lightly touched; let cool.

Frosting

Combine confectioners' sugar, butter, cocoa, vanilla and milk in a small bowl; mix well, adding enough milk to reach desired spreading consistency.

Spread on cooled cupcakes. Decorate as desired, with sprinkles or jellybeans.
