Winter Fruit Trifle

Trifle is a dessert dish made from thick custard, fruit, cake, fruit juice and whipped cream.

INGREDIENTS

Filling

  • 1/2 cup orange juice
  • 1 teaspoon cornstarch
  • 1 1/4 cups Domino® Granulated Sugar
  • 1/2 cup (1 stick) butter or margarine, cut into 8 pieces
  • 1 teaspoon orange peel, grated
  • 5 eggs
  • 1 cup heavy whipping cream, whipped

Cake and Fruit (Trifle Assembly)

  • 6 cups pound cake, cubed
  • 2 tablespoons orange juice or cooking sherry
  • 2 oranges, peeled and sectioned
  • 1 pear, cored and thinly sliced
  • 1 banana, sliced
  • 1/2 cup cranberries, dried

INSTRUCTIONS

Filling

Mix orange juice and cornstarch in medium heavy saucepan. Add sugar, butter and orange peel. Cook over medium heat, stirring constantly, until butter melts, 3 to 4 minutes. Remove from heat; cool completely.

Beat eggs; stir into orange juice mixture. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil and thickens. Immediately pour into a heat-proof bowl. Cover with plastic wrap, letting it adhere to surface of mixture. Refrigerate until chilled, about 2 hours.

Fold whipped cream into chilled mixture.

Cake and Fruit (Trifle Assembly)

Place half the cake cubes in bottom of trifle or other glass bowl. Sprinkle with half the orange juice or sherry. Layer half the fruit, then half the filling. Repeat layers. Cover and refrigerate 1 hour.
