Cookie Pizza Pies

Tastier than take-out and a whole lot more fun, this cookie pie is the dessert-style pizza that'll have everyone scrambling for a slice. Make it with either a vanilla crust topped with a rainbow of fruit or a chocolate raspberry version – they’re all easy and delicious no matter how you slice it!

 

Fruit Cookie Pie

Cookie Pie Crust Ingredients

3/4 cup butter or margarine, softened

1/2 cup Domino® Granulated Sugar

1/4 cup firmly packed Domino® Light Brown Sugar

1 egg

1 teaspoon vanilla

2 cups all-purpose flour

3/4 teaspoon baking powder

1/8 teaspoon salt

1 tablespoon Domino® Granulated Sugar

 

Pie Crust Directions

Preheat oven to 375°F.

In medium bowl, beat together butter and sugars until light and creamy. Add egg and vanilla; beat well. In small bowl, combine flour, baking powder and salt. Gradually blend into butter mixture until just moistened. Press dough evenly into 12-inch pizza pan. Sprinkle with additional 1 tablespoon granulated sugar.

Bake 15-20 minutes or until lightly browned. Remove from oven and cool on wire rack.

 

Filling Ingredients

8 ounces cream cheese, softened

3 tablespoons Domino® Granulated Sugar

2 tablespoons milk

 

Filling Directions

Beat cream cheese with butter and milk until smooth.

 

Fruit Toppings

1 1/2 cups sliced kiwi

1 1/2 cups sliced strawberries

1 1/2 cups mandarin orange sections

1 1/2 cups - raspberries

 

To Assemble

Spread filling over cooled crust, leaving 1 inch around border. Arrange fruit on top, beginning at the outer edge, working your way to the center.

Makes 8 servings.

 

Chocolate and Raspberry Cookie Pie

Pie Crust Ingredients

2 cups all-purpose flour

3/4 teaspoon baking powder

1/8 teaspoon salt

2 tablespoons cocoa powder

3/4 cup (1 1/2 sticks) butter, softened

1/2 cup Domino® Granulated Sugar

1/4 cup Domino® Light Brown Sugar, firmly packed

1 egg

1 teaspoon vanilla extract

1 tablespoon Domino® Granulated Sugar

 

Pie Crust Directions

Preheat oven to 375° F. Grease a 12-inch pie pan.

In a large bowl, combine flour, baking powder, salt and cocoa, set aside.

In a large bowl, with an electric mixer, cream together butter and sugars until light and creamy. Add egg and vanilla; mix until well blended.

Add flour mixture to butter mixture. Mix until incorporated.

Press the dough into prepared pan. With fingers, form a “crust” edge. Sprinkle dough crust with additional tablespoon of sugar. Score the crust for slicing. Bake 15-20 minutes.

 

Filling Ingredients

8 ounces cream cheese, softened

3 tablespoons Domino® Granulated Sugar

1/4 cup raspberry jam

1-2 tablespoons whole milk

 

Filling Directions

In a large bowl, with an electric mixer, combine cream cheese, sugar and jam. Add milk one tablespoon at a time; mix after each addition. Spread the cooled crust with filling and chill.

 

Topping Ingredients

1 cup fresh raspberries

3/4 cup dark chocolate chips, melted


 

Chocolate Dipped Raspberries Directions

Wash raspberries and set aside to dry.

Cover a plate with waxed or parchment paper.

Melt chocolate chips in the microwave in 15-second intervals; turning the bowl and stirring after 30 seconds. Dip each raspberry into the chocolate halfway and allow the excess to drip back into the bowl. Place berries onto waxed paper. Place plate in refrigerator to harden the chocolate.

Remove the crust from the fridge. Garnish the filling with dipped raspberries. Drizzle remaining melted chocolate on top.

Keep pie chilled until ready to serve.
