Pumpkin Truffles

Pumpkin Truffles

 

Ingredients

2 cups vanilla wafer crumbs (34 vanilla wafers)

pretzel sticks

2 cups Domino® Granulated Sugar

4-6 drops orange gel food coloring

6 ounces cream cheese

2 teaspoons pumpkin pie spice

½ cup Domino® Confectioners Sugar

1 cup white chocolate chips, melted

1 bag orange candy melts
 

Directions

In a food processor, process vanilla wafers on high until all cookies are fine crumbs; set aside.

Break each pretzel stick in half, making 48 pieces; set aside.

Pour sugar into a large bowl. Add 4-6 drops of gel food coloring to the sugar. Stir until blended. Pour colored sugar onto sheet pan and spread into a thin layer. Allow to air dry. Cover the sugar with a piece of waxed paper while it is drying, if desired.

Using a hand mixer, cream together cream cheese and pumpkin pie spice in a large bowl until well mixed and creamy.

Add confectioners’ sugar; mix well until blended. Add cookie crumbs; mix until all of the crumbs are incorporated.

Melt white chocolate chips in a microwave in 15-second intervals, stirring after each. When the chips are melted, stir and add into the pumpkin cream cheese mixture. Mix until well blended and dough forms.

Scoop out a tablespoon of dough and, with hands, roll dough into balls and place on a parchment paper-covered sheet pan. Repeat until all dough has been rolled. Chill in refrigerator for 30 minutes.

Remove truffles from refrigerator. Melt orange candy melts in microwave in 15-second intervals, stirring after each.

Drop a truffle into the melted candy melts. Using a spoon, swirl in the candy to cover. Lift out with a fork and allow excess to drip off.

Gently hold truffle over the sugar-covered plate; truffle will be sticky, use a toothpick to push it off of the fork and onto the orange-sugar covered plate. Sprinkle truffle with sugar. Let truffle firm up on the plate. Repeat with all of the truffles.

After the truffles have firmed, gently poke a hole into the top of each truffle with a skewer.  Fill hole with a pretzel stick piece.

Store in an airtight container and keep chilled for up to 2 days until ready to serve.

Yield: 4 dozen
