Berries and Cream Mousse Cake

This fluffy angel food cake is stuffed with fresh berries and whipped cream -- a sweet, fruity surprise!

Ingredients
  • 1 angel food cake, prepared

  • 1 1/2 cups fresh berries (blueberries, raspberries, sliced strawberries)
  • 1/2 cup Powdered Sugar divided
  • 1 (8 oz.) pkg. cream cheese, softened
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • fresh whole strawberries (for garnish)

Yields: 10 servings

Step 1

Slice 1-inch layer from top of cake; lift off top piece and set aside. Hollow out cake, leaving 3/4-inch border on sides and 1-inch border on bottom. Save cake crumbs for another use.

Step 2

Place fresh berries in medium bowl. Toss with 2 tablespoons powdered sugar; set aside.

Step 3

In mixing bowl, combine cream cheese, remaining powdered sugar, cream and vanilla; beat on high until soft peaks form.

Step 4

Fold half of whipped cream mixture into fresh berries. Spoon into hollowed-out cake until even with top of cake. Replace cake top and frost cake with remaining whipped cream mixture.

Step 5

To garnish, cut remaining strawberries in half and arrange on top of cake.

QUICK TIP
  • Look for prepared angel food cake in the bakery section of your supermarket. Leftover angel food cake can be cut into small pieces and layered with pudding, mousse, fresh fruit or ice cream; or, make into crumbs and use as a topping.
