Granola Bars

Make snack time better with these chewy, nutty Granola Bars, packed with toasted oats, coconut, and a touch of brown sugar sweetness. Perfect for breakfast on-the-go or an afternoon energy boost, these bars are an easy, wholesome treat.

Ingredients
  • 1 cup Old-fashioned oats
  • 1 cup Puffed rice
  • 1 cup Slivered almonds
  • 1 cup Unsweetened shredded coconut
  • ½ cup Golden raisins (optional)
  • 1 cup Domino® Light Brown Sugar
  • 2 tablespoons Coconut oil
  • 1/3 cup Water
  • ¼ teaspoon Salt
  • 1 teaspoon Almond extract

Prep Time: 25 minutes / Bake Time: 40 minutes / Yields: 16 bars

Step 1

Preheat oven to 325°F. Grease one 9x9-inch baking pan and line with parchment paper. Line one baking sheet with parchment paper.

Step 2

Toss oats, puffed rice, almonds and coconut together on the prepared baking sheet. Bake for 12-15 minutes or until lightly browned. Remove from oven. Transfer to a large mixing bowl. Add golden raisins and mix well. 

Step 3

In a small saucepan, combine sugar, coconut oil, water, and salt. Bring to a boil over medium heat stirring until all sugar is dissolved. Remove from heat and add almond extract. Pour mixture over oat mixture and mix until all ingredients are well combined.

Step 4

Pour mixture into the prepared pan. Oil your fingers with coconut oil and press the mixture evenly into the pan, making sure there are no air pockets. Bake for 22-25 minutes, or until golden brown. Remove from oven and cool for at least 2 hours before cutting into bars. Store in an airtight container.
