Ingredients

For the Brownie Batter

  • 1/2 Cup (1 stick) unsalted butter
  • 1/3 Cup cocoa powder, Dutch process
  • 2 Large eggs
  • 1 Cup Domino® Light Brown Sugar, packed
  • 1 Teaspoon vanilla extract
  • 1 Teaspoon instant espresso powder
  • ½ Teaspoon salt
  • ½ Cup all-purpose flour
  • ¾ Cup semi-sweet chocolate chips
  • 1 Tablespoon unsalted butter, for greasing the pan

For the Cookie Dough

  • 1 ¼ Cups all-purpose flour
  • ½ Teaspoon salt
  • ½ Teaspoon baking powder
  • ¼ Teaspoon baking soda
  • ½ Cup (1 stick) unsalted butter, softened
  • ¾ Cup Domino® Light Brown Sugar, packed
  • 1 Teaspoon vanilla extract
  • 1 Large egg
  • 1 Cup semi-sweet chocolate chips

Prep Time: 35 minutes / Bake Time: 40 minutes / Yields: 24 bars

Step 1

To prepare brookies, preheat oven to 350°F. Using the 1 tablespoon of softened butter, grease a 9x13-inch baking pan. Line the bottom of the pan with parchment paper. Set pan aside.

Step 2

To prepare brownie batter, in a small microwave-safe bowl, melt butter. Add cocoa powder and using a whisk, combine until mixture is smooth. Set bowl aside. In a large mixing bowl or a bowl of a stand mixer, combine eggs and brown sugar. Using a whisk or whisk attachment, whip until the mixture is frothy. The brown sugar will also be dissolved. Add the vanilla extract and espresso powder. Add the butter mixture to the eggs and whisk until smooth. Add the salt and flour and stir with a rubber spatula to combine. Add the chocolate chips and stir to combine. Spread brownie batter evenly in the bottom of the prepared pan, using a small off-set spatula. Set pan aside while the cookie dough is prepared.

Step 3

To prepare the cookie dough, in a mixing bowl, combine the flour, salt, baking powder, and baking soda. Set bowl aside. In a mixing bowl with a paddle attachment, cream the butter and brown sugar until light and fluffy. Add the vanilla extract and egg and beat to combine. Scrape the sides of the mixing bowl with a rubber spatula and beat until well mixed. Add dry ingredients, and at low speed, mix until just incorporated. Add the chocolate chips and mix at a low speed again to combine the chocolate chips. Scrape the sides of the mixing bowl if there is unmixed dry ingredients at the bottom of the bowl.

Step 4

Using a tablespoon or small scoop, spoon the cookie dough evenly over the brownie batter. Using a small off-set spatula or small rubber spatula, lightly spread the cookie dough over the brownie batter. The dough may not spread entirely over the brownie, and that is fine. The dough will level out slightly as it bakes, and will also give a slightly marbled look after baking.

Step 5

Cover the pan with foil and bake for 20 minutes. Remove foil and bake for an additional 20 minutes. Remove pan from oven and set on a cooling rack to cool completely.

Step 6

To serve and using a sharp knife, cut brookies into 24 bars. This is done by cutting 4 lengthwise and 6 horizontally. The brookies can be transferred to a tray or an air-tight container for serving.
