Chocolate Chip Snack Cakes

These back to school snacks are perfect after a long day of learning!

Ingredients
  • 1 ½ cups all-purpose flour

  • 1 ½ teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 ¼ cups Light Brown Sugar
  • 1 stick butter, softened
  • 2 eggs
  • 1/3 cup milk
  • 2 teaspoons vanilla extract
  • 1/2 cup mini semisweet chocolate chips

Yields: 18 cake snacks

Step 1

Preheat oven to 350°F. Grease or paper line muffin cups.

Step 2

Whisk together flour, baking powder and salt in a bowl.

Step 3

Cream sugar and butter in a mixer bowl for 2 minutes on medium speed until well blended. Scrape down the sides of the bowl then add eggs, one at a time, beating well after each addition.

Step 4

Combine milk with vanilla then beat in ½ of the flour, followed by the milk then the rest of the flour, stirring just until blended.  Stir in mini chocolate chips, reserving 3 tablespoons. Scoop ½ cup of batter into prepared muffin cups. Sprinkle the remaining chocolate chips over the top of each cupcake.

Step 5

Bake for 30 to 35 minutes or until a toothpick inserted in the center of a cupcake comes out clean.

Step 6

Cool 15 minutes in pan before removing from pan.
