Chocolate Marshmallow Cookies

Enjoy the most magical time of the year with Gigi Butler's, founder of "Gigi's Cupcakes" Chocolate Marshmallow Cookies.

Ingredients
  • 1/2 cup or one stick softened butter
  • 1/2 cup Domino® Dark Brown Sugar
  • 1/2 cup Domino® Granulated Sugar
  • 1 egg
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all purpose flour
  • 1/3 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 18 large marshmallows, cut in half
  • 1 bag pecan halves
For the Icing:
  • 6 tablespoons butter
  • 2 tablespoons cocoa
  • 1/4 cup milk
  • 1 3/4 cups Domino® Powdered Sugar
  • 1/2 teaspoon vanilla extract

Prep Time: 15 minutes / Cook Time: 8 minutes / Yields: 3 dozen

Bake Cookies

Step 1

In a mixing bowl, cream butter and sugar. Add egg, milk, and vanilla; mix well.

Step 2

Combine flour, cocoa, baking soda, and salt; beat into creamed mixture. Drop rounded teaspoons onto ungreased cookie sheets. Bake at 350F degrees for 8 minutes. Meanwhile, cut marshmallows in half. Press a marshmallow half, cut side down, onto each cookie. Return to the oven for 2 minutes. Cool completely on a wire rack.

Prepare Icing

Step 3

For the icing, combine butter, cocoa and milk in a saucepan. Bring to a boil; boil for 1 minute, stirring constantly. Cool slightly; transfer to a small mixing bowl.

Step 4

Add Domino® Powdered Sugar and vanilla; beat well. Spread over the cooled cookies. Top each with a pecan half. Serve.

As an adult, Gigi felt that baking had become a lost art that needed to be resurrected. Even though people rarely have time to bake from scratch, they still enjoy eating delicious home baked goods, especially ones that reminded them of their childhood. This led her to opening her first Gigi's Cupcakes location just off Music Row in Nashville, Tennessee in 2008. Gigi's Cupcakes is now the largest cupcake franchise in the world.
