Chunky Oat Bars

Soft oatmeal bars loaded with chocolate chips and drizzled with chocolate.

Ingredients
For the bars
  • 4 1/2 Cups Rolled Oats
  • 3/4 cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract
  • 3/4 cup (1 1/2 Sticks) Unsalted Butter
  • 1/2 cup Peanut Butter, Melted
  • 1/3 cup Domino® Light Brown Sugar
  • 1 Tablespoon Domino® Golden Sugar
  • 2 cups Mini Chocolate Chips
For the chocolate drizzle
  • 1/2 cup Semi-sweet chocolate chips

Prep Time: 15 minutes / Cook Time: 25 minutes / Yields: 12 oat bars

For the bars

Step 1

Preheat oven to 350 degrees Fahrenheit.

Step 2

In a bowl, mix the rolled oats, flour, baking soda, vanilla, butter, peanut butter, Domino® Light Brown Sugar, Domino® Golden Sugar and chocolate chips together.

Step 3

Press the mixture into a 9x13” pan. Bake for 20 minutes.

Step 4

Let the oat bars cool completely then cut into 2-inch bars.

For the chocolate drizzle

Step 1

Fill a heavy-bottomed pot with 1-2 inches of water. Place a dry, heat-proof bowl over the pan. The bottom of bowl should not be touching the water at all. Add the chocolate chips to the heat proof bowl. Turn the stove top on to medium heat. As the water begins to heat up, it will create steam causing the heat to slowly melt the chocolate. Constantly mix the chocolate until completely melted. Let it cool slightly before using.

Step 2

With a spoon, drizzle the chocolate over the oat bars. Let the chocolate set for about 10 minutes. Enjoy!

Additional Tip
  • For a neater chocolate drizzle, you can place the melted chocolate in a food storage bag, cut the corner off of the bottom and drizzle the chocolate over the oat bars.
  • If you are short on time, you can pop the chocolate chips in the microwave to make the drizzle.
