Frozen Peanut Butter Candy Pie

This no-bake candy pie serves up the classic combination of chocolate and peanut butter.

Ingredients
Crust
  • 1 1/4 cups chocolate wafer or graham cracker crumbs (about 32 wafers/crackers)
  • 1 cup dry roasted peanuts, finely chopped
  • 6 tablespoons butter or margarine, melted
Filling
  • 1 cup dry roasted peanuts
  • 2 tablespoons heavy whipping cream
  • 1 pint vanilla ice cream, softened
  • 4 (1.6 oz) pkgs. milk chocolate-covered peanut butter cups, coarsely chopped
Glaze
  • dry roasted peanuts, coarsely chopped
  • 4 ounces (4 squares) bittersweet chocolate, finely chopped
  • 1/3 cup heavy whipping cream
  • 2 tablespoons Granulated Sugar
  • 2 tablespoons butter or margarine
Sweetened Whipped Cream
  • 1 cup heavy whipping cream
  • 2 tablespoons Granulated Sugar
  • 1/2 teaspoon vanilla extract

Yields: 8 servings

Crust

Step 1

In a medium bowl, stir together the crumbs (chocolate wafer or graham cracker), peanuts and butter; combine well. Pat mixture into bottom and up the sides of 9-inch pie plate.

Step 2

Freeze crust for 30 minutes, or until firm.

Filling

Step 1

Blend the peanuts in a food processor, scraping down the sides of the bowl occasionally, for 5 minutes or until nut butter is formed. Add the cream; combine. Add the ice cream and pulse the motor for 6 to 8 seconds, or until the filling is smooth and well combined.

Step 2

Scrape 1/2 of the ice cream mixture into pie crust shell; spread evenly. Top with chopped milk chocolate-covered peanut butter cups; cover with remaining ice cream.

Step 3

Cover pie with plastic wrap and freeze while preparing the chocolate glaze.

Glaze

Step 1

Place chocolate in a small bowl; set aside.

Step 2

In a small, heavy saucepan, combine cream, sugar and butter; bring to a gentle boil. Remove from heat and pour the hot cream mixture over the chocolate, letting the mixture stand for 30 seconds to melt the chocolate. Whisk until smooth. Let cool for 10 minutes or until slightly cool.

Step 3

Remove pie from freezer and pour glaze over top of pie, covering it completely. Freeze pie for several hours or until set.

Sweetened Whipped Cream

Step 1

In a chilled, medium bowl, combine cream, sugar and vanilla. Beat on medium speed until soft peaks form. Serve immediately or refrigerate for up to 2 hours.

Step 2

To serve, garnish pie with sweetened whipped cream and chopped peanuts, or use an additional package of chopped peanut butter cups instead of chopped peanuts.
