Mixed Berry Spring Salad

This gluten-free salad is filled with fresh berries and topped with feta cheese, toasted pecans and a vinaigrette made with flavorful Domino® Light Brown Sugar. Bon appétit!

Ingredients

For the salad

  • 6 cups Baby spring mix greens

  • 1 cup Fresh strawberries, quartered
  • ½ cup Fresh blackberries
  • ¼ cup Fresh blueberries
  • ½ cup Fresh raspberries
  • 1/3 cup Pecans, toasted and chopped
  • 1/3 cup Feta cheese, crumbled
  • To taste Salt and pepper

For the Strawberry Balsamic Vinaigrette

  • 2 cups Fresh strawberries, cut in half

  • ½ cup Olive oil
  • 5 tablespoons Apple cider vinegar
  • 4 tablespoons Domino® Light Brown Sugar
  • 1 teaspoon Salt 
  • ½ teaspoon Ground black pepper

Step 1

In a large serving bowl, toss the mixed greens and berries.

Step 2

Place all the ingredients for the vinaigrette in a blender or a food processor and process until smooth and well combined. Pour over salad to taste and toss to combine. Sprinkle with pecans, feta cheese, salt, and pepper to taste. Serve immediately.
