No Bake Lavender Blueberry Tart

The delicious caramel notes of Domino® Light Brown Sugar join the flavors of almonds, vanilla, blueberries and lavender for a tart that looks as amazing as it tastes. Plus, no baking is required!

Ingredients
For the crust
  • 30 Vanilla sandwich cookies

  • ¼ cup Almonds, previously toasted
  • 4 tablespoons Unsalted butter, melted
  • 2 tablespoons Domino® Light Brown Sugar

For the filling
  • 1 cup Blueberries, fresh or frozen

  • 1 tablespoon Water 
  • ½ cup Whole milk
  • 2 teaspoons Gelatin 
  • 1 cup Heavy whipping cream
  • 2 teaspoons Dried lavender flowers, culinary grade
  • 1/3 cup Domino® Light Brown Sugar
  • ½ teaspoon Pure vanilla extract
  • Fresh blueberries, edible flowers, lavender flowers, as garnish

Prep Time: 25 minutes / Cook Time: 10 minutes / Yields: One 9-inch tart

Step 1

Using a food processor, process the vanilla sandwich cookies and almonds until fine crumb consistency. In a large bowl, combine the cookie and almond crumbs, melted butter, and sugar. Pour the mixture into a previously greased 9-inch removable bottom tart pan. Using a measuring cup press the crumbs into the bottom and sides of the pan. Place the pan in the refrigerator while you prepare the filling. 

Step 2

In the food processor or blender, process 1 cup of blueberries with 1 tablespoon of water. Pulse until smooth for about 1 minute. Sieve mixture through a fine mesh strainer. Set aside.

Step 3

Stir gelatin and milk together. Set aside.

Step 4

Put the cream and lavender flowers in a small saucepan. Warm up the mixture and let it simmer. Take it off the heat and let the lavender infuse the cream for 2 minutes. Put the saucepan back on the heat. Add the sugar and milk-gelatin mixture. Simmer the mixture gently until all the sugar and gelatin dissolve. Do not boil the mixture. Take it off the heat and add the vanilla and blueberry puree. Stir until well blended. Strain mixture through a fine mesh strainer.

Step 5

Remove the tart crust from the refrigerator and gently pour the filling inside. Allow the tart to set on the counter for about 20 minutes and then place in the refrigerator for at least 2 hours. 

Step 6

When ready to serve, decorate the tart with fresh blueberries, edible flowers, lavender flowers, and whipped cream.
